Disney Files Permit for New Restaurant in Monsters, Inc. Area
Work is underway in transforming the former Muppets Courtyard into Monstropolis. And now Disney is set to begin work on the restaurant formerly known as Mama Melrose.
Monstropolis

Many Disney Parks goers will miss the Muppets-themed area that long stood in Disney's Hollywood Studios in Walt Disney World, especially Muppet-Vision 3D. However, many fans are also excited for all that is to come!
After all, we are not completely losing the Muppets. They will take over Rock 'n' Rollercoaster soon. Furthermore, many fans are thrilled to welcome Monstropolis to Disney's Hollywood Studios.
The Monsters, Inc.-themed area is going to bring another thrill ride to Hollywood Studios, a rollercoaster inspired by the famous doors scene. Not only that, but visitors can expect an entire themed area to accompany the ride, including shops and restaurants.
Mama Melrose's Transformation

Now, Disney has filed a permit to begin work on Mama Melrose's Ristorante Italiano. This was once a relatively popular table-service restaurant in Hollywood Studios.
The permit is slated for general construction, so really, it could be anything. However, it is likely that the permit will mark the start of the transformation of the restaurant into something new!
What Will Replace Mama Melrose

It is highly likely that Mama Melrose will be rethemed into a new Monsters, Inc.-themed restaurant. It the concept art is an accurate reflection of what is to come, then the most likely scenario is that it will become Harryhausen's. Harryhausen's is a Japanese restaurant in the film.
It would be fun to see this type of restaurant, especially if it serves up items named after items from the film. These include: Green Tea Ice Scream, Blueberry Slobber, Terrible Teriyucki, and Caterpillar Rolls.
Harryhausen's will most likely replace Mama Melrose.
However, this is still something to be considered speculation since Disney has not officially confirmed it outside of the concept art. And, if canceled announcements like a Moana area and a Mary Poppins attraction have taught us anything, then we know that sometimes the concept art doesn't pan out exactly as planned, or at all.
