When you think cookies in Disney World, one place stands out above the rest. Gideon’s Bakehouse is an extremely popular place to grab treats in Disney Springs at Walt Disney World. The bakehouse serves delectable bakery items including cakes and cookies as well as caffeinated brews. The nitro cold brews are especially popular and pair well with the unique cookie creations.

In fact, these treats are so popular that the line for Gideon’s Bakehouse typically spills out into the street and wraps around the building. If you are at Gideon’s and you don’t see a line, it is most likely because it became so long that the staff moved it to a virtual queue.

However, there is another place on Disney property that has a Signature Cookie!

Disney opened Riviera Resort in December of 2019 as the newest deluxe resort and Disney Vacation Club accommodation.

The elegance and architectural detail immediately drew me in. The ambiance from the outside fountain areas and gardens as well as the marble details and beautiful chandeliers inside made me feel like I was visiting the actual French Riviera.

Did you know that July 16th is National Cherry Day? What better way to celebrate than with Riviera Signature Cookie. Disney has released the recipe so now we can enjoy it at home. If you are in Disney you will find the cookie at Primo Piatto which is in Disney’s Riviera Resort.

This recipe will make 18-24 cookies. You will need:

  • 2 cups all-purpose flour
  • 1 teaspoon coarse salt
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 1/4 cup oats, ground
  • 3/4 cup mini semi-sweet chocolate chips, ground
  • 1 cup unsalted butter, at room temperature
  • 1 1/4 cups brown sugar, packed
  • 1 cup sugar
  • 1 tablespoon molasses
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup walnuts, finely chopped
  • 1 1/4 cup pistachios, finely chopped
  • 1 1/4 cup dried cherries, finely chopped
  • 1 1/4 cup mini semi-sweet chocolate chips
  • Sea salt flakes, to taste

DIRECTIONS:

  1. Preheat oven to 350°F. Line a baking sheet with a silicone baking mat or
    parchment paper; set aside.
  2. Sift flour, salt, baking soda, and baking powder in a large mixing bowl
    Stir in ground oats and ground chocolate chips; set aside.
  3. Cream butter, both sugars, and molasses in the bowl of an electric mixer
    fitted with a paddle attachment until fluffy.
  4. Add eggs, one at a time, and beat on low speed until fully incorporated.
    Add vanilla and beat, scraping the bowl as needed, for 1 minute.
  5. Add 1/3 of flour mixture and beat on low speed until just mixed. Continue
    with remaining flour. Add walnuts, pistachios, dried cherries, and mini
    chocolate chips and mix on low speed until fully incorporated into dough.
  6. Place six (1/4 cup) balls of dough on baking sheet. Flatten slightly and
    top with desired amount of sea salt flakes.
  7. Bake for 12 minutes. Cool for 2 minutes before moving to wire racks.
  8. Repeat with remaining dough.

Disney gives a warning to always use caution when handling sharp objects and hot contents. Be sure to supervise children that are helping or nearby. The recipe has been converted to make a smaller quantity, and the flavor profiles may vary from what you find at the restaurant.

If you want a thinner and crispier cookie, preheat your oven to 375°F versus 350°F and bake for 7 minutes. You will then reduce the heat to 350°F and bake the cookies for 3 more minutes.
